Beef pilau with kachumbari

Cumin and coriander give the rice depth. Cardamom, cinnamon and cloves bring the aroma when you lift the lid.

Start with
Rice, beef, onion, stock and Swahili Gold. Tomato and red onion for the kachumbari.

  1. Brown the beef and soften sliced onion in your usual pilau pot.
  2. Stir in the blend, then add rice and stock. Salt to taste and cook using your usual pilau method.
  3. Rest the rice with the lid on, then serve with fresh tomato and onion kachumbari.

A serving idea to try. Blend quantities and the finished recipe will be refined in cooking trials.

“Sometimes I miss the taste of home. Aferi started with that feeling—and the wish to discover more of what our continent has to offer.”
